French Laundry Balsamic

1 T chopped garlic
1 1/2 t chopped shallots
2 T plus 1 t Dijon mustard
1/4 c balsamic vinegar
1 large egg yolk
2 c canola oil
Kosher salt and black pepper

Place the garlic, vinegar, shallots, and mustard in a blender and blend until combined. Add the egg yolk and blend again. With the machine running, add oil in steady stream until the dressing is thick and emulsified. Season to taste with salt and pepper. You can refridgerate the dressing for 1 week.
