Gazpacho (French Laundry)

1 c chopped red onions
1 c chopped green bell pepper
1 c chopped English cucumber
1 c peeled and chopped tomatoes
1 1/2 t chopped garlic
1 1/2 t kosher salt
1/4 t cayenne pepper
1/4 c tomato paste
1 T white wine vinegar
1/4 c plus 2 T olive oil
1 T fresh lemon juice
3 c tomato juice
Sprig of thyme
Balsamic Glaze

Mix all the ingredients, minus the balsamic glaze, in a bowl, cover, let sit in the refridgerator overnight. The next day, remove the thyme and blend all the ingredients until the gazpacho is smooth. You will have two quarts. For a smoother texture, strain the soup. Refridgerate the soup until ready to serve. Serve in cold bowls with balsamic garnish.
*Can be used as sauce, warm or cold.
